Our broth is slow-simmered for more than six hours until it turns deep, silky and full of umami. The noodles are made in-house with authentic Japanese kansui — the alkaline water that gives real ramen its bite — from a recipe built by a Japanese chef with over thirty years at the stove.
Chicken, pork, or a fully vegan broth: every bowl is finished by hand, from the black-garlic oil down to the marinated lava egg.

Coming from Singapore, and having eaten ramen across Tokyo, Fukuoka and Osaka — the broth here is on point, the umami just right, the noodles perfectly chewy. Some of the best in the Netherlands.
A wonderful experience. The soup is delicious and the fried chicken is perfectly crispy outside, tender inside. Genuine service and the portions are real value for money.
